Makes 1 quart ( I will increase the recipe to make 4-6 quarts at a time as this is great to have on hand)
Canned Apple Pie Filling Recipe
5 cups of peeled & cored organic apples cut into 8ths
1 cup of white sugar
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg *optional
1 tsp fresh lemon juice
2 tablespoons of quick cooking tapioca
1/3 cup of organic apple juice or cider
In a large pot toss the apples with the lemon juice and sugar. Let it stand for 15-30 minutes until the fruit starts to juice up.
Turn your stove on to a medium heat and keep stirring until it starts to boil, keep stirring and boil for 1 minute.
Mix the apple juice, cinnamon, nutmeg, and tapioca into the pot of apples and boil for one more minute.
Pack into sterilized quart canning jars (don't let the jars touch) and make sure there are no air bubbles. Wipe the rim and top and put on sterilized lid and screw to tighten until snug. Place in the rack of your canner and cover with two inches of water. Bring to a full boil and process for 30 minutes.
When they are done set the jars on a thick towel to cool down. When they are cool, the center of the lid should be depressed and not make a popping sound going up and down, if it does store in the refrigerator and use that week.
One quart jar is enough filling to make one pie, just add the crust!
