Look what's for supper from our fields and ponds!

The last meal before the end of hunting season was shared between my husband, Dave, myself and our two friends, Matt and Jim. We are all avid hunters and outdoor enthusiasts!

How special to sit down for a meal shared with friends knowing everything on the table was provided by each of us for a gourmet experience: purple and green cabbage as well as orange carrots from my organic garden, Bass and Perch from our pond, Dave, Jim and Matt went hunting and shot some green head, chubby, Mallards. Two of the Mallards were smoked for appetizers and two marinated and cooked on the grill for blackened duck.

Road Trip

A couple of weeks ago my husband, Dave and I took a road trip out West. It's about 8:00pm and with no place to eat for fifty miles we spot a 1940’s dance hall that advertised Burgers, Booze and Pool. There is a small amount of light shining out from this place and Dave went in, just to make sure it was open and were still making burgers. He came back out with a thumbs up and said the owner told him "The sign says open, doesn't it?" The bar sat twelve people (no one else was in there) and there was a pool table in the other room. The ole timer asked how we liked our burgers and we told him medium rare! His response: “He would try to catch it in time.” He then proceeded to fire up the ole George Foreman, sliced us each a piece of cheese to go on top, a few rings of onion and a pickle. He took a couple of pops out of the cooler and started to share the history of the old place with the walls and ceiling covered in dollar bills.

This chocolate cake is light and not too sweet. My Mom was making this frosting sixty years ago so, it must be good to stick around this long!!

Make your favorite chocolate cake.

Chocolate whip cream frosting:
1 pint of organic heavy cream
1 cup powdered sugar
1/4 cup Hershey's Cocoa (brown and gray container)

Whip until stiff enough to frost your cake. There is enough to put some of the frosting in the middle of the cake or you can cover the outside of a Bundt.

I love flowers! This spring and summer have been a challenge. In the Black Hills, we have had baseball size hail, driving winds, pounding rains, and a tornado or two. Because of all that, it’s a miracle I have ANY flowers.

WhaT ARE PEOPLE Saying

I knew when I booked things sounded pretty good. Upon arrival my expectations were exceeded five fold. Overwhelmingly peaceful setting allowed me to leave it all behind. Sat on the porch most evenings watching all the whitetail about 100 yards away. Breakfast is unbelievable. Terry is a true gourmet. I did not need to eat daily until 5 pm. We felt like family in a short time. The place is immaculate and I loved the natural swimming hole on site. "
